In the Cantabrian Sea, anchovies live in more hydrogenated and colder water compared to the Mediterranean Sea. For this reason they develop a more compact and juicy meat, with more fat. Best quality anchovies are fished between April and June, when the fish has the most amount of fat developed during the colder months.
